
Chile Verde Appetizers
This is a post about a great meal. Specifically Chile Verde. Sure it has nothing to do with SEO or Design — not at least that I’ve really come up with yet, but when you make an ethnic dish at home that blows your favorite restaurant’s version of the same dish out of the water, it’s worth writing about. For the sake of total transparency, in this case, “you” means my wife. I take no credit on this one — except some minor post-meal cleanup.
What was so special about this Chile Verde? Well, let’s start with the fact that everything was made from scratch — even the tortillas. Maybe homemade tortillas are the norm for all y’all, but not in our casa. At least they haven’t been. Although, these were SOOO tasty, that it wouldn’t surprise me if they become a fairly regular thing. It’s safe to say that they aren’t even the same sport as store-bought tortillas. Impressive! The homemade tortillas sound fun to try. Did you actually use a comal?
No, no comal. Just our largest omelet pan. Something cast iron would have been better (for the pan), but the poor creature is already pretty warped. It would be nice to be able to do 2 at a time, but not a huge deal. Michelle heated another pan up in the oven, pulled it out and wrapped up the tortillas inside a towel in it to keep them warm. Worked really well.
